I’m sure many of you are PB & CO fans.
If you haven’t tried any of their peanut butters, go out and buy them. I promise you, they are amazing.
A few weeks ago I saw this in Publix.
I had only tried their Dark Chocolate Dreams before and have always been wanting to try more.
If you haven’t noticed I’m one of those nut butter fanatics.
Anyway, I knew I had to buy it.
Once I tried it, I died.
Literally.
It was gone very soon and lately I’ve been interested in making my own nut butter.
I’ve always wanted to try it but never realized how easy it really was.
I stumbled upon this recipe on Healthy Food For Living’s Blog.
I died again.
I knew I had to make it, and if you noticed on yesterday’s post I bought some peanuts and raisins at whole foods.
Make this now.
(Taken DIRECTLY from Healthy Food for Living)

Ingredients:

1 1/2 cups roasted, unsalted peanuts, preferably organic

1 Tbsp. ground cinnamon

1/4 tsp. Kosher salt

2 tsp. evaporated cane juice

1 1/2 tsp. canola oil, divided

1/4 cup raisins, preferably organic
Directions:

Place peanuts into the bowl of a food processor. Process until peanuts break down into a paste and a ball forms, scraping down the sides as necessary, about 5 minutes.

With the motor running, stream in 1 tsp. oil and process until a smooth butter forms.

Add in the cinnamon, salt, and evaporated cane juice and puree until well-combined. Stream in the remaining 1/2 tsp. canola oil if needed. Remove blade from food processor bowl and stir in the raisins by hand.
Nutrition Information per 2 Tbsp. serving:
158.6 calories, 12.1 grams fat, 1.6 grams saturated fat, 9.9 grams carbohydrates, 2 grams fiber, 5 grams sugars, 5.5 grams protein
Now, I’m sure you will want to taste it while in the process of making it but here’s a tip.
It’s even better after you place in fridge overnight.
