Pecan-Crusted Orange Roughy

I finally went grocery shopping today. I feel like I JUST went and spent a million dollars but unfortunately there wasn’t much food in the house since last week.

How does that seem to happen? One second I swear I’m never food shopping again and that this shopping will last weeks, and before I know it I am scrounging around lucky to find a crumb in the house. Tell me this happens to everyone else?!

We’ve been out of veggies for a few days and I went through withdrawals. I am one of those weirdo’s that LOVES veggies and could eat a tub and be happy.

This is where the salad “beast” that you all refer to comes in. Romaine, spinach, tomatoes, carrots, banana peppers, veggie burger, cottage cheese, peanuts.

I tackled a bunch of my to-dos and finished making more pita chips before the pita got bad.

Anyways, onto dinner!

I wanted to share a recipe because it was super yummy. I bought Orange Roughy last week and this was the recipe on the back of the bag. This is DIRECTLY from Publix so I take no credit. Definitely worth sharing!

Ingredients

    1/4 c flour
    1/4 c. milk
    1
    Egg
    1/2 c chopped pecans
    1/2 c bread crumbs
    12 oz. Orange Roughy, thawed
    1/2 tsp. seasoned salt
    2 Tbsp. canola oil or cooking spray
    Directions

1) Place flour in shallow bowl. Combine milk and egg in second bowl. Chop pecans finely; combine with bread crumbs in third bowl.

026029027I used whole wheat flour but you can use any.

028I used dairy-free milk and it was fine, but again you can use any.

2) Preheat large sauté pan on medium. Sprinkle fish with seasoned salt. Dredge in flour, dip in egg mixture, then dredge in pecan crumbs.

3) Add oil to pan; swirl to coat. Cook fish 2-3 minutes on each side until golden.

So good! It gave the fish a nice little crunch and spruced it up a bit. It was nice to have a change because fish can sometimes get a little bland. I made this all myself too 🙂

This morning I did 30 minutes on the elliptical and then took a total body works strength class.

Cross-training! So important. I find that I need a break from running sometimes! I worked with resistance and speed on the elliptical.

These are for your inner and outer thigh. Most people may neglect these muscles or they use the machine or simply go up and down with their leg standing up or laying down.

This move is a different approach and really makes it burn!

Outer Thigh: Keep your hips stacked and bring your knee into your chest.

This is like talking on the phone but texting instead. You hold and speak into the phone and the other person receives it kind of like a voicemail but you’re not using your phone minutes! It’s fun and definitely good when you don’t want to text. Maybe at times like if you are driving and cannot text!

Lack of Motivation

Let me just start by saying after reading this post by Brittany, I was astonished to find out that it was National Coffee Day. Why have I been un-aware of this celebration my entire life?!

Enough with the pictures, I’m sure you all get the point Winking smile

It is no secret that I LOVE coffee to the point where I may or may not be addicted. I cannot go a day without it and although I’ve already had my coffee fix for the day I still thought it was too important not to address it.

I wasn’t planning on making this blog a coffee anonymous blog, so sorry I got carried away. Onto the good stuff!

This morning I snoozed 327 times as usual but finally got up and went to school. I knew that I wanted to run today but I didn’t know if it was going to be outside, on the treadmill, how far, fast, etc.

I was also debating whether or not I should run the second I got home from school, or wait it out and go a little later in the day.

Since I had breakfast SO early, I had a Lara Bar for a snack around 11pm.

I have been eating a Lara Bar almost every day because I always need a snack on my way home and they are so easy to grab and go. I also got a bunch of new flavors I’ve never tried so I’ve been very impatient to trying them all.

Where was I again? Sheesh, I get way too distracted. Oh yeah, running.

I wasn’t really motivated to run. I don’t know if it was because I was tired, just being lazy, or what but I just wanted to wait it out and then go later.

Well, I know myself and I know for a fact that going right away would be the better choice. I knew I would feel SO much better and still be home in about an hour and have lunch at a reasonable time. The Lara Bar gave me some sustenance without being too heavy for before a run and I wasn’t starving so I thought it would be a good time to get it out of the way.

It is very RARE for me not to want to work out. I am always down and I just love it. No matter what type of exercise I do, it makes me feel so good.

  • It gives me a sense of accomplishment
  • It gives me different goals to work towards
  • It challenges my mind
  • More importantly challenges my body
  • Makes me feel strong

So when I’m not necessarily feeling a workout, I have many tactics to get my butt moving! I’m sure everyone has their own little ways to give them some motivation and I’m sure you guys have read something similar before. However, I want to share what I do that helps me. Everyone is different!

  1. Get dressed. If I just put on my workout clothes and lace up my shoes, it will already give me a boost of motivation to get going.
  2. Walk out the door. This may seem ridiculous that I’m even bringing this up. However, whether you’re going on a run or going to the gym for some strength or cross training, just getting out the door is a good step towards getting in action.
  3. Go on the way home or the second you get home. If you’re anything like me, the longer I wait to workout, the LESS I want to workout. I love going in the mornings because it is less crowded, and I like to get it out of the way. Since my classes are all super early, I have had to go once I got home. Sometimes in the afternoon, sometimes in the evening.
  4. Ask yourself what would you be doing instead. If you ask yourself this question and your answer is along the lines of, “sitting on my butt reading 73 blogs, Facebook stalking, pinterest-ing everything, watching TV till my eyes fall out, or absolutely nothing,” then it will make you realize that working out with probably be much more productive. Whenever I sit on my butt and do nothing for hours on end, I feel crappy and get really bad headaches. I might be over-exaggerating here but it just makes me feel better if I already got my workout out of the way:)
  5. Ask yourself if you have anything important that needs to be done NOW. If you’re a student and have online homework or a quiz due in 30 minutes, obviously waiting to workout would be a fine idea. If you have no priorities that need to be done, workout and clear your mind!
  6. Think about how great you feel after a workout. Whenever I finish a workout I have endorphins running wild through my brain. I am happy and feel amazing, accomplished, and STRONG. Just thinking about that feeling makes me want to workout more than ever!
  7. Just do it. Not meaning to be cliché, but if you just start a workout, see how you feel after about 10 minutes or so. Once I actually start running or lifting weights, I will not want to stop until I am completely done with what I set out for. If you start and after a little while absolutely hate your life and are dreading every second of it, then stop. Who cares! If you’re really not feelin’ it, no ones stopping you!

I hope some of these tips help you guys out when you are not feeling motivated!

Since we’re on the topic of working out, I will catch you all up on what I’ve been up to on the fitness front.

Yesterday, I went to the gym for a strength training workout. I started with about 25 minutes of HIIT like I did the other day. I incorporated super fast sprints with fast walking recovery.

I then moved onto the weight area and completed an upper body workout similar to this one from Julie, with some squats and leg lifts mixed in.

I had the gym all to myself and loved every second of it.

Today my arms were a bit sore! I upped my weight a little yesterday so that did the trick, I like being sore:) Call me strange, but it’s true.

Today I just completed a 5 mile run with a 1/2 a mile cool down. Even though I wasn’t feeling it too much today, I knocked it out and it was done with in no time! I walked a bit and slowed down at some points during my run but that is completely fine with me.

I will be honest with you all, I have been neglecting a past love of mine for a while.

That’s right, my foam roller. I haven’t been using it as much lately but I seriously need to. I am going to foam roll the second I’m done with this post. It hurts so good.

You Snooze you Lose

This is what my morning looked like.

3:28 am – Wake up because I have to pee. (tmi?)

3:30 am – Bentley sprints into my room and I let him stay because I have to wake up in two hours anyway. I am such a pushover.

5:30 am – Alarm goes off, accidently hit dismiss instead of my usual snooze.

5:35 am – Realize my alarm will not go off again because I hit dismiss.

5:36 am – Set my alarm for 5:45

6:30 am – Mom comes into room asking if I was supposed to wake up early

6:31 am – Spring up out of bed and freaks out because I have to leave at 7

7:03 am – Out the door

I’d say that is a major accomplishment! I did my make-up, got dressed (okay I scrubbed with gym clothes but at least I had clothes on), had coffee, read blogs, and had breakfast all within a half hour.

My savior? (Other than my mother) = OVERNIGHT OATS.

If I didn’t prep them last night I wouldn’t have had such a good breakfast 😛

I need to learn to wake up right when my alarm goes off instead of snoozing 700 times.

I am taking a SPIN class later today and I am excited! Am I the only weird one that gets excited to workout? I swear it’s normal. I absolutely love spinning and the instructor at my gym is amazing. She switches it up every time between tempo, intervals, hills, etc. and I always get a new workout each class.

Since it is only Tuesday (bleh) I figured I’d do something fun. Instead of me talking about what I learned in school, this would be much better! I realize I just recently did a survey too but who cares? ;D

  • 4 Frozen Strawberries
  • A few pineapple chunks
  • 3/4 C. Frozen Mango
  • 1/2 Frozen Banana
  • 1 scoop Vanilla protein powder
  • 1 pinch shredded coconut
  • 1 pinch xanthan gum
  • A couple drops of Agave Nectar

I basically threw random stuff into the blender and it came out pretty delicious. Definitely a success to me 🙂 Topped with some Kashi Heart to Heart.

After a nice boring day full of school, homework and procrastination productivity, it was time for me to get my sweat on ;D

I don’t know about you guys but whenever I do not get to the gym in the mornings, I am really itching for a workout later in the day. Since all my classes are super early and require about an hour of commuting, I have only been able to workout in the evenings.

I haven’t been minding it though because it’s nice to not be rushed in the mornings and by the time I get to the gym, I have my game face on and am ready to do work!

It used to be the other way around, the longer I wait, the lazier I get. Which is still true I guess it just depends on the day and the mood I’m in.

I started with Courtney’s Quickie 20 minute workout that I saw on her blog this morning. Loved it! I even got my mom running a bit with me! (She has bad knees and running usually hurts her). I then trained my mom with a circuit workout from Gina (Fitnessista). Love that workout too!

Dinner was easy but yummy as usual. I guess that’s how I roll! I’m not very good at coming up with recipes. Plus if I’m starving then quick and easy is the way to go.

One for One–Toms

Yesterday turned out to be a really great day!

I woke up a later than usual and lounged around the house the entire morning. Sometimes it is necessary to have a lazy morning. Sunday’s seem to be the perfect day to do that around here ;D

I got started on “breakfast” around 11:30. I wanted something different for a change so I decided to make Julie’s Pumpkin Protein Pancakes. I’m not a huge pancake fan but I wanted to give it a whirl and I loved them!

They may look a little burnt but they didn’t taste it at all. They were so filling!!! The protein definitely contributed to that.

After brunch, a little house hunting happened. I think we found a really nice place to live because our lease here ends in October. It is cheaper to.. win-win!

I’ve been eyeing “Toms” for a long time so we went over to the mall to scope some out. The first time I went to whole foods and they didn’t have my size.

Found ‘em! Toms is great because not only are they SUPER comfy, but they give a pair of shoes to a child in need every time someone buys a pair. Such a great concept. More companies should really do this.

They had a huge variety of colors, sparkly, and prints but I stuck with black because it matches everything. I’m so exciting 😉 Next time I’ll definitely get a fun one!

After shopping a while, it was time for a little pick me up.

I woke up to this little booger barking his head off.

Don’t be fooled by that innocent little face. Lately when he wants something he barks until he gets it. Of course I’m a pushover so I give him what he wants. Now he’s smart enough to know that will always work. He’s so spoiled!

I slept like a baby because I got new pillows yesterday. Best decision of my life. Well until I make another great decision, but for now it is awesome to me.

Today is my REST DAY. After a week of working out hard, it’s nice to have my rest day on Sunday’s so I can fully enjoy the day and let my muscles rest and get stronger.

Last night mi madre and I went to a new campus of our church. It was nice and just as good, but I like our main one better! The main one has the pastor right in front of you whereas this campus shows him on the screen. This campus is closer to us though and it was nice to check out a new environment.

We didn’t get out of church till around 7:30 and we were super hungry. The thought of driving home about 15 minutes away and then cooking just wasn’t appealing to us the slightest bit.

We decided we deserved a nice little night out and we stopped at Friday’s because they had a good deal. We each got the 2 for $10 where you can pick an appetizer AND and entrée or an entrée AND a dessert. The only logical thing to do was to each get one and one get an app and split it and the other get the dessert and split it. Good deal if I say so myself!

Forgot to snap a picture of the appetizer but we had a spinach and tomato flat bread.

For my entrée I got the Dragonfire Chicken. It was a grilled chicken breast with some orange stuff over rice and broccoli on the side.

The flash went off so the picture isn’t great quality. I ate all the chicken and all the broccoli and ended up leaving almost all the rice because it wasn’t that great. The chicken and broccoli were good but just a little spicier than I expected! I’m a baby when it comes to spicy though.

My mom got the parmesan encrusted chicken which came with a tomato and mozzarella salad on the side.

For dessert, we were trying to decide between the Oreo ice cream sandwich, the peanut butter pie, or the vanilla bean cheesecake. I wanted the Oreo or the peanut butter because that’s just what I would always rather have. Plus, I really don’t like cheese cake! =O Sorry to all you cheesecake lovers but it’s too heavy and creamy to me. I’d much rather have chocolate or peanut butter! Of course, my mom decided on the cheesecake because that is what the server recommended.

Talk about massive! I ended up having two bites and then had to stop there. It was vanilla bean and white chocolate. I’m not a huge fan of white chocolate either so that was more than enough for me. It was pretty good though, my taste buds were just not into it especially since I was feelin’ the chocolate.

I just got home from being out all day and am getting ready for church.

About a week or two ago I found something amazing at the store.

Whoever has not tried this yet, drop everything you’re doing and go get some. I’m not kidding it is out of this world. I wasn’t sure what it was and I was expecting to be like a peanut butter, but it is actually made out of biscoff cookies. It is sweet and delicious and tastes like dessert. Apparently, it is the Europeans alternative to peanut butter. People in Europe also eat nutella so if that stuff isn’t addicting enough, this is the new deal.

I’ve been wanting to come up with a recipe for baking with this spread for a while and last night after dinner I really was in the mood to bake. However, I got lazy and didn’t feel like experimenting in the kitchen at 9 o’clock at night. So what did I do? Looked up a recipe of course 🙂 Two clicks and I’m there. I used this recipe from Two Peas and Their Pod. I followed the recipe exactly except I cut it in half, so head over there and check it out if you’re interested! Here are pictures of the process.

Dry oatmeal mix

Be careful when placing on sheet because they came out HUGE next time I’d use less for each cookie

Ta da ;D Yum! I thought the biscoff would be a little more noticeable but it was still deelish.

Next time I have enough time, I’ll definitely come up with a new recipe so stay tuned! In the meantime, buy this spread and enjoy it. Warning: it is dangerous.

This morning I slept in till NINE and it was wonderful. That is late to me these days, pretty sad. After relaxing and a light breakfast, it was gym time!

I did 20 minutes of HIIT on the treadmill.

  • 2 minute warm up
  • 20 seconds @ 9.0
  • 40 seconds @ 4.5
  • 2 minute cool down

I then took my favorite yoga class and it was amazing.

After that, we stopped in the mall because I needed new pillows and I wanted TOMS. There were none in the mall so we stopped at Whole Foods and they didn’t have my size.

I’m a tall girl so I wear a big size and my right foot is bigger than my left –___-

It was also around lunchtime so this happened.
