Blonde Moment

Let me start off by rewinding to the weekend. I completely forgot to include this in my weekend recap post but I had to share because honestly, it’s a pretty funny story. This weekend I explained how I met my mom at Barnes N Noble and was out the rest of the day shopping and what not. Later on I was completely exhausted from the move over the weekend and was just lounging around after dinner. We had a movie that we rented from the blockbuster at Publix and had to drop it off. So we grabbed Bentley (my dog) and headed out to the car. Once we opened the garage my car was missing. I remembered parking it in there once I got home and we started freaking out. My mom was literally about to call the police and I was practically crying. You guys may be able to figure out what happened next. Well, after a couple minutes of going crazy I burst out laughing. It dawned on me that I drove to Barnes N Noble and ended up leaving my car there while we were at the mall. Seriously one of the scariest yet dumbest moments of my life, but thank the Lord I remembered because that would’ve been really embarrassing remembering after the cops showed up! I’m used to it though, I’m really good at embarrassing myself. No shame.

Anyway, now that I got that out of the way, Good Morning! I know it’s already 11 o’ clock but that’s fine. Last night I told you I had a recipe to share! After the gym and getting showered, we decided to make some fish for dinner. We had Orange Roughy in the freezer so that’s what we made. I don’t think I’ve ever eaten this fish before but the recipe we used was amazing! On the pack of the package there was a recipe for Pecan-Crusted Orange Roughy however we only had pistachios and that’s what we used. Let me tell you though, it was a great decision. One worth trying and super easy.

1/4 C Flour

1/4 C Milk (I used almond)

1 Egg

1/2 C chopped pistachios

1/2 C bread crumbs

12 oz. Publix Orange Roughy

1/2 tsp. seasoned salt

2 Tbsp. canola oil

  • Put flour in shallow bowl. Combine milk & egg in second bowl. Chop pistachios finely, combine with bread crumbs in third bowl.
  • Preheat large sauté pan on medium. Sprinkle fish with seasoned salt. Dredge in flour, dip in egg mix, then put in pistachio crumbs.
  • Add oil to pan; swirl to coat. Cook fish 2-3 minutes on each side.
  • Voilà! Serve with sides of preference.

We had ours with fresh steamed broccoli and a sweet potato.



This morning I woke up a little sore, but I still headed to the gym. I hopped on the treadmill and completed 2 easy miles to flush out my legs. I actually ended up walking a little over a half mile for a warm-up & cool down. I switched over to the elliptical and completed 10 minutes switching off from pedaling forward and backward every minute. Once I was done with my cardio, I decided to take a full body works class that focuses on strength training. From reading all about body pump, it sounds like it’s a similar format but I go to LA Fitness so I guess it’s their version.

When I do my strength training, I try to switch it up by doing medium weights one day, light weights with high rep another day, and heavy weights with a lower rep another. It’s good to switch up your strength training so you get maximum results and so you’re not always lifting the same amount of weight. Today the class focused on light weights with a high rep. And boy it was definitely a high rep, we barely got a break! I like when classes go like that though because you really get to the point of fatigue that you should reach while weight training even with a lighter weight. I was only using 5 lbs. but still felt the burn. The instructor switched from upper to lower body many times so it was good to switch and give one a rest while the other worked.


OOIAJ for breakfast! I would’ve never discovered this little piece of heaven if it wasn’t for blogging. Thank you. Although the first time I tried overnight oats, I wasn’t a big fan, but thankfully I tried it again and I’m now obsessed.


1/3 C rolled oats

1/3 C almond milk

1 peach dannon activia

1 Tbsp. chia seeds

sprinkle cinnamon

1/2 banana

Mix it all together, put it in the fridge overnight, and enjoy in the morning. I usually put a little more almond milk in the morning just to loosen it up. Top with nothing or anything you’d like.

Now I’m off to run some errands and probably pet / walk this little cutie Smile
