Sorry I was MIA yesterday, I have a quiz today and I was studying.

I’m the QUEEN of procrastination and of course left it to the last minute Winking smile

Since I was on vacation this weekend, I thought it would be a perfect opportunity for a new post today.

I ordered the egg white omelet with low-fat mozzarella cheese, peppers, and mushrooms. So good! It came with an orange which I only tried, whole wheat toast (I had one piece), and Hash Browns I think? I only tasted it. I ate most of the omelet though!

Mom had the corned beef hash I think is what it’s called. With two dippy eggs and toast!

Breakfast held us over almost all day! So we had a late lunch when we stopped by Panera. I practically flew over from 4 lanes of traffic when I saw it because I knew it had Wi-Fi! Sorry I’m not sorry but we didn’t have any in the hotel!

I had grouper topped with shrimp, spinach, peppers, and some sort of cheese, asparagus, and a baked potato. I did not eat the sour cream, it grosses me out!

She had some sort of shrimp, scallop, and sauce linguini. The scallops were awesome.

We also ordered dessert for her birthday.

It was some sort of Hot fudge brownie but it was the worst thing ever.

It was mostly ice cream and whipped cream, I don’t even think there was a brownie so we only had a few bites, and it went un-pictured!

That pretty much sums up my eats from vacation.

Not too bad if I say so myself. Stayed pretty healthy too! Smile

Chocolate Chip Cookies and an Early Morning

Wow, today has already gone by super fast!

So much to say and do, so little time.

Let me start off with the weekend. If you’ve read my recent blog posts, I had a little weekend getaway to Sarasota, Florida.

It’s only about 3.5 hours away from where I live now so it wasn’t a bad drive at all!

Even though I had to drop my dog off at my dad’s about an hour away though so he could watch Bentley for the weekend, it still didn’t seem like too far of a drive.

We had a great weekend. We were celebrating my mom’s, err, 30th birthday? Winking smile

It was windy, I don’t intentionally wear my hair like that!

It was nice to explore a new city and just relax and do exactly what we wanted with luxury!

We went to the pool, Ringling Museum, Siesta Key Beach (#1 in America), and had great dinners and just a general good time.

Birthday

My mom’s birthday was yesterday, which unfortunately we spent most of the day in the car driving.

By the time we got home we were so tired all we ended up doing was grocery shopping and relaxing.

Fajitas were requested by the birthday girl so that’s what she got!

These are seriously super easy to make and healthy too.

We grilled up some chicken breast and cut it into strips.

Then we sautéed peppers and onions in a pan with the chicken.

You then take whole wheat tortillas and put this chicken-pepper-onion mix inside and roll up. That’s it.

We also boiled some corn along with it, which was delicious.

Throw in some chips and salsa, and maybe some margaritas if you’d like and you’ve got yourself a homemade healthy Mexican feast!

Chocolate Chip cookies were also requested by the birthday girl and since I love to bake I was more than happy to whip up a batch of some.

I found a recipe on taste spotting, which were not healthified at all.

But you know what? Sometimes you need the real thing in all it’s glory!

Workout

This morning I got up at the crazy time of 5:30 am. I am used to getting up around 7 am but this is a new level for me.

Honestly, it’s not all that bad. I actually kind of like it!

I went over to the gym and completed this workout.

  • 10 min warm-up on the bike
  • A total body weight workout by Lindsay but I did switch it up just a bit. I generally followed it though.
  • 20 min interval run by Julie. I switch this up a bit also but generally followed it.

It felt AMAZING to be done with my workout before 7:15 in the morning!

I came home and got ready for school.

I wanted something quick, cereal always does the trick.

Now I have TONS to do such as homework, studying, laundry, and more.

I woke up this morning around 7 am and went over to my mini gym.

It was poppin’ today! Sheesh. This is an old photo because I didn’t want to look really weird taking pictures of myself and get awkward stares when there were people around in such a small space.

I did all upper body and 3 miles of RUNNING!

I was still a bit sore but I finally ran, I feel like its been forever but it’s only been since Monday.

Anyway, I had a great workout. I just did various upper body exercises for different muscle groups. Biceps, triceps, shoulders, back, etc..

I came back home jumped in the shower and made myself iced coffee ❤

It’s even better when you’re all sweaty & hot.

I don’t know what is up with the whole hurricane Irene thing but it’s GORGEOUS out today. Seriously, like perfect blue skies and windy so it’s a little cooler and less humid!

I really wanted eggs for breakfast but we were out. Of course! The one time I want something savory we’re out. So I went with the ol’ bagel thin with PB, Jelly, & fruit.

Now I am packing and then I will be off to Sarasota!!

Weekend Getaway

TGIT! {Thank God It’s Thursday}

Winking smile Fits perfect since I have NO school tomorrow.

I forgot how great that feels since I’ve been on summer vacation!

This morning I was up at 5:30 am to get to my 8am class.

It was POURING and cloudy all day long. Boooo Annoyed

I did have a very productive day though!

Had class and actually learned something, got my books, did a bunch of homework, and I’ll spare you the rest of the boring details.

Honestly not one of the most interesting days I’ve had, but hey at least I still got a lot done!

Workout

I. am. still. sore.

I feel like this is never going to end!

However, I did want to be active in some way so I ended up doing another interval incline walk for 4.10 miles.

I also did a bunch of ab work and rounded out my workout with 10 minutes of easy cardio on the bike while I read.

An easy workout but not too strenuous. I iced when I got home and foam rolled of course. I can’t get enough of that thing lately, you guys are probably already tired of hearing about it and it’s only been a few days.

When I told ya today was not that interesting, I really mean it. In all aspects of my day.

I didn’t take ANY pictures today. Oops. So I will use recycled ones!

I had cereal for lunch, and soup and a pita pocket for dinner.

I’ve been eating pita pockets almost every day. They are just so easy and obviously I haven’t gotten tired of them yet!

Weekend Getaway

This weekend is also my mother’s birthday! We decided that we needed to get away even if it’s a small vacation.

Initially, we planned on going to Amelia Island located on the east coast of the northern part of Florida. It looks gorgeous and we were so excited!

Since hurricane Irene is running along the east coast we decided it would be in our best interest to steer away from that area. I’m sure it will still be raining like crazy even if it doesn’t hit Florida directly.

Now instead, we are going  to Sarasota. My mom has always been interested in visiting there and I always wondered why because I thought there wasn’t much to do.

Since it’s her birthday she makes the decisions but I saw pictures and it looks really pretty! Anything on the west coast I love because of the beaches and the sunsets are usually beautiful.

We leave tomorrow morning so I’m off to pack and get ready. Can’t wait to get away Open-mouthed smile

I Can’t Believe It

Happy Hump Day!

I felt like this week has taken a really long time. I woke up this morning saying “is it seriously only Wednesday?” I just need to get back into the swing of things and officially out of summer mode!

Wednesday is also one day closer to Thursday. Thursday’s are actually “Friday’s” for me because I have no classes on Friday. SCORE!

 On another note, I have something to share that I’m completely baffled by…

I am STILL sore. Yup. I can’t believe it. It’s not even like I’m kind of sore, I am actually just as sore as yesterday if not even more to the point where I still walk funny.

I don’t remember the last time I was this sore for two days in a row, crazy!

I have been foam rolling like there is no tomorrow AND I iced today.

I’m hoping I’m good to go tomorrow because I’m seriously dying to do a normal workout.

This morning I actually set my alarm for extra early so that I could hit the gym for some upper body weights. When I woke up, I was super tired. I decided to listen to my body and get an extra hour of sleep. It was wonderful.

Also, the other day I woke up with a scratchy, sore throat.

This has made me feel tired and not as good as usual the past couple of days, and this morning it was still lingering.

So today I decided to take a rest day.

I contemplated on taking a yoga class or just doing upper body weights tonight, but I figured that this is my body’s way of telling me to chill out.

I am usually doing workouts involving great effort about 6 days a week, and sometimes I just need a break.

As I was thinking of my post for today and how I may need to take a break, I came across Fitnessista’s Blog Post.

If you haven’t seen it yet, it was a focus on rest days!

I took it as a sign. I like to be active, a lot and even though I know how great and beneficial rest days are, I’d rather only take one a week. No more.

If you check out her post, the part that jumped out at me the most was the part on how do you know if you need an extra rest day.

I fit ALL the categories.

EXTREMELY sore? Check.

Exhausted? Check!

Sick? Check.

So there we have it, a rest day was well needed. I need to learn how to listen to my body more effectively because I’ll admit, I can be pretty stubborn and only do what I want to do at times.

It’s honestly SO important and doing so will just make you stronger and that means the workouts after your rest days will be even better. I’d rather have good quality workouts than too many crappy ones.

After a MUCH needed extra hour of sleep, I finally got up and made myself a cup of coffee, of course Smile

I took Bentley on a walk and he seriously gets SO excited. It was wet outside so I had to dry him off when we got back in! Whenever I do this, he gets really wild and starts growling and running away and back thinking he’s tough.

This is my I don’t feel like getting all pretty but I don’t want to look like a total hobo either look.

I realized wearing dark jeans in 98 degree weather in the summer of Florida is not such a brilliant idea.

Also wearing my hair down and frying it to death does no good because in 2.3 milliseconds of stepping outside I will have an afro.

Solution: Shorts, ponytail, headband.

P.s. Do not wear a white shirt and forget your umbrella before going to school. Just don’t.

Dinner

After getting some school work, laundry, and dishes done around the house it was time for dinner! I am seriously super tired and now I know why my mom never wants to cook when she gets home from work.

However, we did anyway because I still enjoy it and don’t want to eat microwave crap like I used to live off of.

I tried something tonight I never have before, OKRA!

We’ve been picking up a new vegetable or two each week and revolving our meals around them.

To prepare the Okra, I steamed it like edamame.

First I rinsed them off and cut off the ends.

Then I simply boiled water with some lemon juice and salt and put them in once it came to a full boil.

It quickly boils (maybe 30 seconds – 1 minute mine took) and then I strained and topped it with salt and a little bit of butter.

The end. Seriously that’s all I did because I didn’t know how else to make it!

We had it with Hot Organic Chicken Sausage and rice.

They See Me Rollin’

Good evening everyone!

Sheesh today was a busy and stressful day!

I am just now getting to relax, and it’s only the second day of school. Oh boy.

Good news is, Add/Drop week is always the most stressful because everyone is just finalizing their classes and picking up books and supplies.

I had to wake up at 5:30 am this morning. I haven’t been up THAT early in who knows how long!

Anyway, on to the interesting stuff Open-mouthed smile 

Last night was the last time to spend time with my brother Brendan before he was leaving again. We barley get to see him because he lives about 6-8 hours away, so we made sure to have a nice night.

We made dinner and had steak, tilapia, mushrooms, salad, and rutabaga fries! Super yummy, but unfortunately I forgot to snap any pictures.

However, I did get some pictures of these babies.

I saw this recipe on Julie’s Blog and new I had to try it! It sounded so easy and perfect.

Low and behold, they were delicious! I used Carrot Cake Mix instead of the spice though because I bought the wrong one, oops. It still worked the same though, I definitely recommend these.

I also cut up some watermelon. It was so fresh and juicy, I love summer fruits.

I almost cried. Tears of joy, of course. It actually kind of hurts but it hurts so good and massages your muscles!

Oh my gosh. Just to inform you all, I woke up SUPER sore this morning from yesterday’s workout.

I don’t get crazy sore all that often, but for some odd reason when I do deadlifts, I can’t walk the next day. Those evil things.

Even after foam rolling till I went to sleep last night, my hamstrings are DEAD. I could barley walk! So ridiculous.

I kind of like being sore but not to the point where I can’t even workout.

After my stressful day at school, classes, waiting an hour and a half to talk to an advisor, monitoring the computer like a crazy person waiting for someone to drop the class I need, and much more, I wanted to blow off some steam!

However, I knew I couldn’t take my usual spin class that I love because honestly I wouldn’t be able to do it with my legs in this condition.

I am completely over exaggerating. Kind of, not really.

So instead my mom and I went to my mini gym once again and I totally copied Courtney and completed her Walking Treadmill Interval’s workout. I knew it was a good way to blow of some steam by not getting too crazy.

I loved it! I worked up a sweat and it still got my heart pumping and was just the right thing for me today.

Now excuse me, I have another date with my foam roller. Rollin’ till my legs fall off, literally. Then I will probably be sleeping by 10pm. I may be the craziest college student you’ve ever met Winking smile Catch you all tomorrow!

I survived my first day at a new college!

I have been super busy so that’s why I am just now getting around to posting!

I’m sure this creepy face is not the first thing you wanted to see, but I put it anyway.

Last year, I was attending the University of Central Florida.

I had a great time the first summer I moved up, but for some reason it wasn’t the same during fall and spring.

I loved living on my own and being away at a college but it was expensive for me even with financial aid and I felt as if I could be getting my pre requisites at another college for much cheaper.

Bottom line, I didn’t think it was worth being away at the time.

So I made a huge decision to move home for a year and attend Florida Atlantic University.

Was I excited? Yes. Was I nervous? Very. Do I regret moving home? Maybe, probably.

At the time I made the decision to move home, it was absolutely the best decision for me.

Now that I look back and really think if I did the right thing, I’m not so sure. I am super sad that I’m not there with friends I was supposed to be living with, but at the same time knowing I’m saving so much money makes me feel better.

I do think it will be fine and I will get to experience a totally new environment, people, and school. I also am not sure what I want to do with the rest of my life but I know I will transfer again next year to another university.

I will take the time I am living home this year to figure out what the heck I want to major in FOR SURE and where I want to go in life. Pretty much I will make the best of the situation and really spend time to get awesome grades and raise my GPA so I can go to a better school next year.

I can always transfer back to UCF next semester if I can’t stand it here, but right now this is where I am and I’ll take it one day at a time.

Yesterday

Lets back track really quick! Since I didn’t have time to blog last night I’ll do a quick recap of what I did on my last day of summer.

My mom had plans to go to Rapids Water Park with a group from her church. She literally begged me to go and since her birthday is next weekend, I couldn’t say no!

I forgot to snap pictures the whole time! It was definitely more fun when I was younger, but we still had a great time! I haven’t been there since I was like 10 so it was fun to ride the rides still.

I was exhausted when we got home but we made dinner and just relaxed.

I got stuff ready for school and actually found out my class was a half hour earlier than I originally thought! I’m so glad I rechecked my schedule!

My brother came in to town from college at about midnight, and I was so glad to see him! He’s staying only till tomorrow until he heads further south to see some friends and my dad. I love him!

This morning I wanted to give myself enough time to get to the gym, and have time to get ready without being rushed. I can’t stand when I feel rushed, I get stressed out!

I have a problem. Every time my alarm goes off, I tend to hit snooze about 79 times, while still asleep, before I actually get up out of bed. That was the case this morning. Not a big surprise!

After having my daily dose of caffeine, I geared up and went over to the gym in my apartment complex instead of LA Fitness. I figured it’s usually empty and closer so it would be great for a workout sesh before school.

Low and behold, I arrived to have no one else in there! This gym is super convenient when I want to get a good workout in without driving all the way to the gym.

I completed a workout similar to this one where I switched from cardio to weights and back a couple of times.

I warmed up with 2 miles on the treadmill and ended up doing an interval series. It wasn’t a crazy interval but it was good for a warm up, it definitely still got my heart pumpin’!

Whew, that was tiring just to type!

It was an awesome workout and I love breaking up the cardio and strength, it really makes time fly.

I usually find myself in the gym the longest when I do this type of workout and it doesn’t even feel like it, at all!

Love these things. I topped one half with my homemade Cinnamon Raisin Peanut Butter and the other half with cherry preserves and some blueberries. I also had an apple to finish off my meal.
